HOW TO BEAT EIGONG
Since she is such a common complaint and I actually super enjoyed her fight I will attempt to alleviate other's struggles somewhat.

First of all you are no longer playing how you want to, you are playing how SHE wants you too. You must entirely adapt to killing her from whatever you were doing before.
Some basic stuff to avoid.
DONT USE UNBOUNDED COUNTER
Dont bother with basic attacks just use charge attacks. Just hold the charge attack button constantly for real.
Dont bother using talismans except like once or twice per phase.

Focus on countering, dodging and slipping in charge attacks, it makes things far easier than the awkward timing of Unbound Counters (She has at least ONE move that cant even be unbound countered anyway) and talisman application can really mess up your timing or the direction you're facing and get you hit over the head.
Use whatever jades you want however the ones I felt were the best were, Immovable Jade, Focus Jade, Breather Jade, and Recovery Jade. The only one i'd HIGHLY reccomend is Focus Jade as that makes your charged attacks do more damage than even internal damage parries do.
The rest are there to keep your HP up and make using charge slash a bit easier.

Now to breath down the phases and what to focus on.
PHASE 1. You are mainly hitting her after she does the 3 jabs, the attack where she dashes through you, after she misses a talisman, after her Red Bomb, AND after the attack where she dashes into a whirlwind of slashes.

Focus on parrying her weird timing basic attacks, always throw a charged hit in after the 3 pokes or she slashes through you. Just hold the opposite direction immediately after the latter and let go of charged attack. She'll SOMETIMES dodge out of these but worry not you recover from your charged attack before whatever she does next.
You can sometimes slip a charge slash in after she does the overhead underhead hits but thats ONLY if she's going into the rapid pokes after. If shes going into the twohit combo that slices behind you, you're gonna get hit. So i'd reccomend against getting too fancy there, but you only take a bit of damage from this if you're feeling ballsy.

Always watch her movements so you know what kinda red attack she's doing, when she pulls a talisman you Jump and then let go of your charge slash on the way down. When she does the sword swipe from above that leaves flames behind, just dodge it as she lands then DODGE AGAIN away from her, as during this phase she ALWAYS follows up with the whirlwind of blades dash after landing this.

The third being the bomb fist, the second you see her charging this up just start RUNNING away from her, it has very short range and if you even have a bit of distance and dodge as she flies at you, she'll probably miss. You can charge attack her easily after this as she sits in the flames for a second, clearly dumbfounded the big telegraphed bomb missed. She sometimes gets tricky with the bomb and uses it when you're way too close to avoid it or after using another bomb fist to trap you. Sadly in these cases you just gotta try to dodge as perfectly as you can. Only hit dodge RIGHT as she lands to I-frame through it, whether you should dodge away or through her in these close quarters bomb fist scenarios is sadly something you gotta eyeball, if you're really close you can be better dodging through her as she lands though.

The whirlwind dash is the best attack to get down dodging, as you can usually get TWO charged hits in after it. She'll sometimes throw the whirlwind in randomly but its usually after just that specific red attack. Just try to keep your spacing and if you cant dodge towards her fast enough try double jumping as that gets you out of it too, or just spamming arieal parries. The only downside to those methods is its harder to get in two charged slashes after.

If you prefer to arial parry her talisman attacks thats fine, its just slightly less damage is all, pop a talisman on her instead of a charged slash after some of her bigger moves near the end of the fight to pop the internal damage.

Now for phase 2.

Mostly the same as phase 1 but she gets trickier with timings. She'll go off basic attacks into the flaming down slash more, and she wont always do the whirwind blades after the flaming downslash too.
The two major additions are her zelda sword beams and the arial follow ups to her talisman attacks.
The sword beams you just gotta make distance first of all they're way harder to dodge right up close. Secondly WATCH HER NOT YOURSELF. The second her eyes go white she's gonna start with the red slash and you gotta dodge, then from there its a matter of getting down timing for parrying the two follow up slashes, cause your ass CANNOT dodge through those too. Dont forget you can spam parry to at least survivable success, but I do reccomend trying to get the timing down to save you from being constantly at low HP.
Now after you parry those two she's gonna either charge another red slash or IMMEDIATELY whirlwind dash through you. This is why you DONT take your eyes off her during this attack. Default your mind to "Dodge away from her" cause if you see her move after the two parryable zelda sword beams you need to REFLEXIVELY dodge away from her. This will put you near her face in most cases and you can do the usual follow up of two charged slashes as per usual for the whirlwind. If you find it easier to reflexivly double jump or rapid parry more power to you here.
And ofc if she's charging the red sword beam then you just wait it out until she opens her eyes again, dodge through it, then if you're close enough release your charge attack at her face.

Now for the talisman follow ups. You can still jump and charge attack her face, but if you're grounded immediately jump and start parrying. As she's gonna do two rising swipes at you. Another thing you gotta feel out the timing for sadly but spamming it can still work here just fine. After you parried the two rising slashes just start walking away from her and watch, as she's gonna charge up a bit longer then fall. Dodge the second you see her start falling, and you should be able to turn around and charge blade her, maybe even twice.
That makes the talismans the BEST moves for getting damage in now too since you can get upwards of 3 charge attacks off.

Now you won! Or you didn't in which case.

PHASE 3.
WELCOME TO THE JUNGLE
Throw out most of the previous tactics outside of reacting to her basic slashes and charge moves. You need to ALWAYS be ready for her to transition into the SCREENWIDE SAMURAI ATTACKS through.
Those are the only real addition besides her getting yet again more tricky and tight with some timings.
The best way to deal with those is go airborne so you dont have to worry about facing the wrong way, time your parries to the flashes across the screen, and ofc dodge through the red attack she sometimes throws out in the middle. TRY TO STAY AIRBORNE as she'll always follow up these slashes with either a whirlwind attack or try to catch you mid falling with a talisman. Simply SPAM AIR PARRIES as you're falling and it can counter both of these. if you happen to land jump and start parrying. You can hit her after the whirlwind at least once and the talisman is followed up the same as with phase 2.

Phase 3 is honestly the easiest once you learn to love air parries.

IN general for healing too dont forget to count your corpse as just free healing at this point as you shouldnt have any more xp to gain or stuff to buy. And if you want to use your pipe just go for it after making distance from any of the spots you'd have bigger openings for charge attacks.

Good luck and hope this helps! Im sure there's other strategies out there too that arent so pigeonheld but this felt the easiest to me as you're mainly just reacting and not focusing on trying to slip hits in, positioning nonsense off talisman dashes or the awkward timing of the unbounded counters.

I would disagree with this notion as the Unbounded Counter move introduces great Internal Damage, and, combine with talisman attack you can greatly cut down the time required to beat the first two phases(more combat time means more chances for the player to make mistakes). Surely the timing to unleash UC is hard to manage however once you've figured them out you'll find out the hit determination frames are very lax.

The Unbounded Counter move is not really useful in phase 3, figure out the parry/dodge/talisman timing/method is the key to success.

I have recorded a tutorial video of what I think is the most reliable way of beating 80% Eigong: https://www.youtube.com/watch?v=pN0MWskyhVo

I disagree strongly. My recommendation is almost the exact opposite. light attacks, water style, and after you counter her talisman twice, look to do unbounded counter on her big follow up.

do water style talisman after she does her "many slashes" attack and also any time she switches sides on you during her normal strings. Also after unbounded counter.

I actually recommend the exact same for phase 2. in phase 2 you can also do unbounded counter after she slashes into the air and comes back down with a heavy attack.

small question, does statis jade work on eigong? im trying to do full control blast but sometimes it works, somtimes she just follow up attack so im confused as to whether it works or not

I believe the Stasis Jade does not work on Eigong(or only work in a very insignificant manner), she is the last boss after all.

For the Full Control talisman style I'd suggest prematurely interrupting the attack if there's not enough time to detonate the talisman.

For me it was Qi blast, it gives you less opportunity to attack than water flow and realistically this slows down P1.
P2 goes through fast however cause she gives you many opportunities to do unbounded counters that will give you enough time for a 3 Qi explosion, plus you get back 1 arrow. With a big supply you never have to worry about the sword slashes in P2 or P3 (which was my Kryptonite).

You need to get the rhythm of Talisman counters she does, 1. If she disappears dodge 2.If after the first slash she does not slash down, dodge, arm an unbounded counter. 3. If She slashes down, land and charge an unbounded counter.
It is safe to keep pressing parry during these as you will more than likely block the attack, she also seems to favor not doing the same thing twice. So if you get scenario 2 from up there she will do scenario 3 on the next time she slashes upwards.
If you run Qi blast that is what you want her to do as they give you opportunities to do big damage and end P2 relatively fast.

P3 it is harder to stay safe but ideally you want her to do the talisman attacks cause that will give you easy counters like in P2. Normally with Qi blast you should have plenty of arrows left in this stage and can keep 1 or two in reserve and the others just use if you survive the teleport attack just to chip away at her HP.

But also yes, Stasis jade does not work.

If there's one extra aspect I like about this game and this fight is watching other people do it differently than me. This player practiced an unorthodox method of bypassing her ranged red slash attacks as well as not doing a single unbound counter (probably because he wasn't good at it lol):

Also just saying, I highly disagree with OP.

Unbound Counter is free dps with Hedgehog Jade + Reciprocation Jade. 90% of the time you are parrying and that parry = internal damage = 1 talisman hit = huge dps

Easy, just switch to story mode.
