Playable with a fight stick?
As in, do you need the d-pad or right stick for anything crucial?

Asking because I've got a wrist issue and dual analog controllers screw me up, but I can use a fight stick for anything that doesn't expressly need the right stick.

RIght stick is mostly useless, unfortunately up on the d-pad is used for healing. Controls can be remapped, but every other button is used, though R1 is for an ability that is not used in combat if that helps.

Well, like, I can rebind stuff, it's just, "Is one control stick and eight or nine buttons enough?"

I think you can but you won't be able to bind all buttons. I run out of the buttons when I was trying to bind all buttons to my leverless controller. There is are two buttons which are not crucial (next arrow and previous arrows - you can change arrows in menu). Also some commands are unbindable and assigned to default buttons (you cannot remap them).

I managed to bind the Leverless controller in dualshock mode (since there is + 1 Touchpad button) a convenient option 4 (stick) + 11 (others). Or you can refuse the left and right d-pad (4 + 9), or leave only one of them, since they switch cyclically (4 + 10).
P.S.: the keyboard mode can also be configured, but you need to take into account that the menu control is scattered all over the keyboard, in my case I could not scroll down to read the message I found in the game.

I'm just gonna have to wait until after my wrist surgery and hope I can hold a controller again, I guess.

Thanks for all the input.
