Why were they killed apeman?
I really don't understand. or maybe I've skipped something.

Short version: They needed the brains to ensure the computing power that their technology required. Brains, in the right and advanced hands, are little supercomputers.

They take three apemen every two years, but we see those conveyors processing dozens of bodies every minute.

Pretty sure those body parts are wastage for them to dispose, the soldiers are made by Kanghui (that regenerative boss in Jiequan prison)

To add, my understanding of the reason for its perpetuity is that the brains do actually decay over time, so the regular harvests, despite the dwindling population of Solarians kept alive in vital sanctums/soulscape, are required to keep the whole system running in the first place (which is why "freeing the apemen" is synonymous with "dooming the Eternal Cauldron" according to Kuafu)... Either way though, the entire human meat grinder is likely mostly automated to begin with. It's grim to think about constant lives being blindly sacrificed to endlessly feed into a system that's barely even working anymore.

Well, to the sols apemen are nothing but animals to slaughter just like farm animals. (they even have a dish that I speculated/ the game hinted made by apemen heart) So they probably don't feel bad for grinding them up.

When the solarian species is at the brink of extinction. Dominating another species for survival is understandable. If I were in their shoes I would do the same.

And all the mammals humans experimented on and killed as a result have good intellect.
The brain implant experiments by Neuralink and Synchron are examples of this. And that is not including the older studies or live stocks.

It may also be worth mentioning that the game names a "95th livestock pen" (in my second playthrough, I noticed it mentioned by Jiequan before the prison area and Shanhai 9000 in the cortex center) which likely is an alternate name for the Peach Blossom Village. The "95th" implies that many more "livestock pen" villages were constructed than we ever see in the game...

Shanhai 9000 in the cortex center also mentions in a roundabout way that "the third brain harvest this season has successfully concluded... or was it the fifth?"

Perhaps it still doesn't explain the industrial amount of human remains being processed in the Apeman facility, but they probably do harvest a great deal more than 3 apemen every 2 years.
