Imo, the centaur is one of the tougher ones so far (just beat #5) because you have so little stats and options compared to later in the game and the 1-2 combo of getting smacked into the ground followed by the uppercut without being able to roll dodge if you lack the requisite skill to avoid the follow-up makes him very unforgiving.
Be ready to get smacked around by the other bosses too while practicing their parry timings, movesets, and counter strategies. If after getting bounced around by the centaur is too frustrating to deal with then don't be afraid to hop over to Story difficulty where you can set the damage taken/dealt values to whatever feels comfortable, just remember that the intended difficulty for the narrative is to get smacked around a few times before you eventually overcome the challenge.
1b) The enemies damage tends to scale such that if you're in an appropriate zone for the point in the story they'll deal a significant amount of health on each hit. A couple tips is that each enemy only really has 3 or so moves that you need to get the parry timing down and don't be afraid to use your Mystic Nymph to scout around and plan attacks on areas before stumbling into them. Even simple scouting to ready yourself for threats can help limit unnecessary damage from surprises not including times where scouting can let you take out key threats/annoyances before involving other enemies in a group.
2) There are no markers which you can place, but from my own experience you can get most, if not all the secrets in the first pass through of an area with whatever ability they grant you for that area. The map chips tell you how many chests and secrets you've found for the covered areas but you'll need to have restored the Shanhai 9000 in your pavilion first to use them. This game is much more focused on combat and its narrative story than exploration compared to some of its peers.
3) Attack you need to find the Tao Fruit scattered around. HP and Medicine Pipe you need to progress through the game, including beating the Centaur for the latter. Just make sure to get at least 1 poison item on hand as you go along.
I have 4 of those fruits. How do i use them tho? Or do you just need to find them?

By collecting the tao fruits, your attack power increases automatically. I don't remember if it actually tells you your attack power anywhere.
Regarding the boss, this is probably the first real trial of the game since you need to get used to the whole parry stuff. Once you've done that, the game becomes significantly easier imo (except maybe a few bosses).
I kinda hate that he fill almost the entire arena, because he is so big.
Might have a better chance no with damage upgrades. 👍
Also you don't have to worry about touching his hurtbox. Contact damage is more the exception for enemies rather than the rule as compared to Hollow Knight so feel free to bump up against most enemies as you slash them if you want. In this way, his large size is more of a setback as you can freely attack more of him and is key to hitting him as he passes by on his dash attacks. His weapon's range/coverage area on the other hand is more or less designed to let you know you need to get used to parrying. Keep practicing at it and good luck!
Also, one thing I forgot for 3) is that Medicine Vials instantly increases you max use for the pipe and refills all your previous vials as well. The healing amount per use does require progression though.
I guess finding a few flowers helped, but tbh the moveset is not really difficult. The only problem is, one mistake can cost you the fight because of the insane damage and some weird follow up attack.
It's not that the fight was super bad, just felt a bit cheap imo.
