You can get a decent amount from the Orders book as well if you lay in a good stock of every type of vegetable. Once you've run through the entire Produce orders list a few times, you can get 40 ryu for each additional time you run through the entire list.

I'm in chapter 14 and I nerver have the Trade ledger, I did all Haruka interactions, farm max level, I have a dog and a cat, doing almost all recipe meal. How do you unlock the trade ?

It's a mechanic of the Another Life system. It even does a full walkthrough. You clearly skipped the tutorial and ignored it since. It's the book in the corner the house.
