You have a solid foundation. It is responsive on my ancient rig, the art style is pleasant, the crafting and building system is well done, and there is nothing truly annoying.
Flying feels a bit clumsy, but that is what the demo is for: tuning this sort of mechanic based on feedback.
You have no actual game yet, but I get a sense you have a good idea of your planned features already. I hope you have a story, though!
I'm going to guess two years for a full, polished release. Maybe six months away from a solid early access release, which I hope you don't rush.
But like I said, your foundation is sound, though your demo is thin and maybe a bit too early; there is only about an hour or so there. Barely a taste!
