Is it possible after beating it?

SO I was thinking about beating the game more than 3 times that are suggested by the game. Just for the achievements' sake and all possible different conditions of gameplay Laika has to offer.
This question is for people that beat it already: After reaching the ending of the main story are side quests still available to be done? Also, the most important one, can you OVERWRITE the fully done save to start the new game?

I'm kinda late. The game gives you a warning before the final boss. You can do everything you missed before this. You can also jump back into the game after finishing it. The game puts you before the final boss. I'm not sure about the overwrite part. You can try manually deleting the save files in your LocalLow folder.
