As for why people want Chaotix, it's very simple! SEGA has never re-released that game in any way and many fans are curious to try it out sometime and experience a somewhat forgotten piece of SEGA history even if it's not very good.
I agree with you on Sonic Spinball though, and I think the only reason why people want that in the collection is because it was on the Sonic Mega Collections back when they were released for the PS2/Xbox/GCN. Probably nostalgia value is all.
If the price stayed the same, the presence of such games in the collection, even if just emulated with nothing new added, wouldn't do anything to hurt. Most people just wouldn't be buying for those games specifically, they would be a draw for a few extra sales on the side.
Personally, i don't care for any of the three games. Of the three, I'd probably rather play Spinball, but then there's much better pinball style games out there, even within the Sonic series (Sonic Pinball Party). The only thing Spinball really has going for it is the arcadey charm it has going on, but that wears off pretty quick.
3d blast, eh can live without it
chaotix is very obscure due to its limited launch platform, so i can see the demand for that
The problem is that everyone has their own standards for quality in regards to entertainment media. Everyone has their own reasons for why they like or don't like any particular movie or book or video game or painting or etc. Those reasons are personal opinions, and personal opinions are subjective.
3D blast is good because there’s alot of content to it. Nice load of levels of good size. Special zones are good. 3D blast is good.
I can’t get passed the level consistently on spinball find it quite frustrating.
Chaotix is empty indeed. Like an unfinished game. Or a very early prototype game.

Sonic 3D blast is a good sonic game, with solid gameplay and good controls (yes, the control is 100% accurate)
yes, it can be a bit confusing with the isometric camera, which people tends to think the control are a problem (which it isn't)
but the game is an 8/10
yes, in 1996
now we are in the 2022, where making a 3D game to be on top, be relevant and sell your console no longer applies
Mania would've been a better choice on the Saturn than whatever Xtreme was gonna be.
Also isometric 3D platforming is weird and the whole "flicky fetching" quest is reminiscing of the Treasure Hunting which doesn't really fit Sonic's fast gameplay.

They are lengthy but they are great watches and they give insight that I could not have thought of myself, so I do recommend watching them and some of the other videos.
