I don't understand why he tells me to corner and beat trunks quickly but it doesn't trigger the next part, it just takes me back into the main story.

it's in difficulty by default so I have access to the secondary objective

You aren't killing him fast enough, lower his health fast enough and he transforms into Super Trunks and then you kill him for that branch. You will get new dialogue mid combat right before he transforms.

Then it's so fking hard lol.. the ai in this game it's frigging nuts.

Yeah the ai in this game in close combat is super aggressive, while in ranged mode they're slow snails who can't find anything.
On default difficulty it's just best to cheese the enemy.
In Budokai Tenkaichi 3 it was at least fun to fight and also tough.
Same with Budokai Tenkaichi Tag Team (psp game).
