You keep all the inventory items you bought at stores, recipe books (though it gives you the option to buy recipes again, you don't need to unless they update patch how that works), items from capsule machines. You also retain all the money you were holding, fixed tables for the cafe, items in your apartment and the bike if you bought that.
You will however, lose progress with the maids, their stats will be reset to their defaults, so I recommend saving a decent sum of money up from before the credits roll so you can rebuy the skill books. You also need to play through the game to properly meet the maids again, so only Shiro and Miyu are available when starting a new playthrough.
