Tournament level players are not normal.
As for getting good at breaking them start a bit in practice mode, record a throw for the opponent and try to break it.
Most throws are fairly obvious once you get used to seeing them so don't worry too much if you confuse them with normal attacks at first.
King throws are a bit more of a guessing game so maybe search for videos about him in particular.
If you can't break them at all you can try ducking and punishing them, but in the long run it's better if you learn to break them.
the situation can happen in Street Fighter 6 too where you might have fights where throws will always get broken or just about.
some people just don't get mixed
another thing that helps is mind games, if your reaction isnt so good but you manage to break one throw chances are next time they will try to throw you it will be the other throw
it's entirely a learnable reflex skill. There are clear differences in the throw animations except for the few that are true 50/50 guesses

King's Giant Swing, has a 10f startup, looks like a 1+2 break (since it is a double handed grab), but is actually broken by pressing 1. Therefore, the best way to not get thrown is to predict which throw your opponent will use (command throw vs. generic), and then break the throw when it happens, or hard duck + while standing punish the moment you see the hands come out.
