If you don't want to eat losses to learn a new character then spend some time in the lab before jumping into ranked.
Yes, you can play one character, and face the entire roster and know the fundamentals.
I play King. I can pick up Kazuya and do farly well. Hell, I can even PEWGF because I can Beast Step, and that used to take a lot more precision than your average Mishima wavu.
I also secondary Armor King, so yeah the wavu stuff is a complete joke to me.
I can go down the roster and while I can't do advanced stuff with everyone, I can indeed do the bare basic stuff. That's more than enough to completely wipe the floor with low ranks. That's the reason for everyone else ranking with your main. You're still gonna curbstomp beginners.
And if you want to rankk everyone and then go "waaa I'll lose no way" then guess what? That's why you suck. You should never be afraid of losing. Or get angry over it. It's natural to want to win and feel let down that you didn't, but insulting your opponent over a fair and square match is nonsense. You win some, you lose some. Even the GOATs lost a ton of matches, and that goes for every single game. You should never forget that, and if you look up to a pro who's like that, guess what? Find better role models. Do you see a brawl breaking out on EVO floor? No? There you go. Respect is key.
So, yeah. It's to prevent curbstomps because they WILL happen even if you never ever touched a character in your life. Fundamentals remain, and knowledge based off your matches stays.
