Mods don’t hurt too
I've heard some things about input delay being "funky" on PS5. That's actually one of my main concerns, and keeping PS+ up.
I played the demo on ps5 before I tried it on my PC, I didn't have any input delay, played it for a good few days (but I gotta take more breaks with fighting games unfortunately). Still pretty fun, I think either device is fine to get tekken on, but I guess if you have or care about a playing on a steam deck getting it on PC has the benefit.
Pc is a no brainer where there is no online subscription required
No point in getting this game on PS5 unless you wanna make Sony richer by subscribing to a glorified game rental service that lock online play and your cloud save behind a paywall that got increased last year for no reason. Oh I almost forgot : mods.
