Also if one can choose between two genders does it somewhat affect how love interests treat you? Like one female interest might be more forward towards a male protagonist but a bit more shy regarding a female protagonist for example?
While the devs answered I just wanna give my own 2 cents on it. I believe they use only your epithet and name and they to refer to you so you can easily imagine yourself and the sexuality of any char you date.

Six more questions if I may:
1) Can one optionally befriend characters just as well as one can romance them?
2) Is it possible to piss off characters or make then antagonistic towards you?
3) Are there any fade to black sex scenes like in Baldur's Gate 2 to show that the relationship is no longer platonic?
4) Are there any later interactions with a successfully romanced character after the love confession and making things "official"?
5) Can one engage optionally in adultery like in Sunless Sea with the cheated partner potentially getting angry over it if he/she discovers it?
6) Are there any potential polyamourous relationships where all sides are aware of it and fine with it?

3. I don't know what those are like specifically but there are intimate moments for sure
4. Yes but I think the specific nature of the game isn't quite what you're picturing here

6. Sort of yeah (it's not a poly sim but there are a couple of choice scenarios that come close)
The game is less a 'date em and have sex scenes' sim and more a "create lasting connections through natural conversation as much as possible in a game" er game. There are sex scenes but you can beat game without ever even kissing someone
I'm a bit greedy, I like when its possible to either choose just romance or just sex or romance AND sex or just choose friendship due to no one being my type or not making any romantic/sexual connection due to choosing to play as asexual/aromantic.
I love having as many options available as possible. :)
