So we are both stuck, sorry to say. Between not having the right tools to navigate and some of the control scheme choices ( I lost a ship while undocking it) I'm 1 or 2 restarts away from setting this aside. for awhile.
Make sure the sail is up, then stand on the dock at the front of your boat and push the hull out at the front. if you turn the wheel a bit first, it will keep turning away as you hop in, then get the sail out and pull it in and off you go
Navigation tools are useless for local navigation like this, their level of accuracy is about as wide as the archipelagos themselves
Sailing south/south west an entire day without seeing anything is quite some achievement tbh. You've either gone clean past them in your sleep, or you aren't really moving
before accepting new jobs, check the wind, and make sure your target destination is not upwind. at the most, you'll want the wind coming in on a perpendicular angle. at least until you get the hang of the various methods of fighting your way upwind.
the silver lining here is that you just started, so you only lose a bit of time by restarting.
oh, also, al' ankh is listed as the "easy" start, and it does indeed have the easiest boat to sail. the problem, however, is that it's perhaps the hardest region to sail in. yes, storms are rare, and wind changes are slow, but the latter actually becomes a problem, as you've just found out. as the first reply mentioned, the islands all sit low on the horizon, and it's easy to miss them if you're not close enough.
what i did was sail around in al' ankh till i got comfortable sailing, then i restarted my game, this time starting in emerald.
My opinion is that Gold Rock is a good place to head to at first because they have the best contracts, it's in the middle of the map, and easy to find. For navigating around the archipelago the compass and map are all you need for navigation, everything else is unnecessary until you set off for another archipelago.

Emeralds are quite stormy so take care!
That is actually easier than starting in Al'Ankh and sailing to Emerald, so maybe you have done yourself a bit of a favour
