Are they able to be killed? I shoved a dreadnaught hull with ~16 fixed gun MKII in their face and they mostly seem invincible. Why are they even there?

Apparently there are some builds that can kill them, but there are other ways to get something of value from them. Not every situation needs to be resolved with violence.
a dn with 6 fixed mk2 and 6 mk3 engines can kill them, even in a pack. But it's a super tedious slog of whittle down, run away, repeat

Eytan is right, though. There are multiple ways to play this. You really don't even need to enter their system.

I put my cruiser in there space just as a test and was holding my own with up to 6 of them, destroyed one but ultimately it was attrition that got to me over time, this was before I even put shields onto my ship.

Enough crew combined with battle stations can keep you afloat while you whittle them down but it's a long battle until you research higher tiers of weapons research
I wiped out all they had with a dreadnought with 10 fixed guns and 7 shields, but it is not fun at all. They are an about as subtle as a sledgehammer to the chest approach to have a task where battle doesn't work and that is supposed to be solved with guile or a bribe.
If you want to kill them, fixed guns are the most efficient way, but use less guns and mount them onto reinforced vents, otherwise the overheating will nerf your efficiency into oblivion. Lure their ships away from the stations and take them out first. Go for the drives and chew 'em up from behind. The stations are incredibly tough, you should have a lot of shields, use fixed guns in normal mode (not cannon) and soften them up a max range so they cannot target you with their lasers. When shields are down fly away, regenerate, and close back in. If you have already inflicted a lot of damage, switching to cannon ammo and going into point blank range can speed things up quite a bit.

yeah 6 Fixed lvl 2 on option cannon (stronger but take alot power, need at least 5 reactor lvl 3) every of it with its own reinforce vent and a free space on both side, 4x full fighter bay, alot of havok, and it was quiet easy, like 40-50 second for each base.

I went back yesterday and had a different strategy. I had 2 Lvl 2 plasma for point defense and 147dps of Lasers, If you hit the stations plasma guns (located mid face on each of the 3 sides) you can sit out of range of the stations lasers while blasting yours, if you focus a little bit more on the middle face (so the hex's beside the guns are gone (easy since their not armored) then there is insufficient power for the stations lasers once all 3 sides are destroyed.

At that point it's just sitting there until you cut enough armor to damage the core, the fixed guns are a joke at that point as I just raised the shields for 3 shots and then dropped them again while the station slowly rotated away and the guns pointed at nothing.

Ships were a joke too, target the engines from behind and once they are crippled you can sit behind them and work your way to the core without much threat from all the forward facing weapons (only some minor plasma which you can also target and wipe out if you want)
