There's another similar builder type game called "StarShip Constructor", that I can't really recommend, because it is abandoned and very buggy, but I still want to mention it, because it has this ominous dark feel to it in its graphic and sound design that I really liked and don't really see in other space games. The backdrop has those constant lightning strikes going on while you have this dark music playing as an undertone in the background. Ship explosions feel heavy and impactful. Even just engaging your boosters felt really bass heavy, which just added to this dark feeling. The trailer unfortunately does not convey all of this in the slightest, thanks to the loud garbage music, and there's just a couple videos of it on YT from an old build before the game revamped into a more open universe. I think some developers could at least take note of this one.

Wayward Terran Frontier might also be worth a mention, but that's also kinda stuck in development hell for a long time and feels a little directionless.

That's more like a Mount & Blade in space though. Not bad but a very different feel imo since you don't really have "your" ship.
It's open source, so if you can and want to, you can very much contribute to it yourself to help speed up the development.
