Depends on the stat. Some stats get something special at 100, or so I hear. You can level a stat past 100, but that's overkill.
Health and Mana both increase a little with each level, but require stat investment if you want more.
Defense is optional. You get plenty of health from level ups, and if you invest in speed you can avoid getting hit entirely. I don't know what happens when you get this to 100.
30 strength is perfectly decent. Pump that up to 100 and you'll be one shotting everything outside a miniboss. Some enemies are immune to everything except a specific melee weapon, so I don't recommend dumping this stat.
30 dex is a decent jump height and decent ranged damage. This used to give falling control at 100, but that's now enabled by default to help low level players in the platforming levels. At 100 you'll be one shotting most things with a bow. Due to the rare platforming sections, I don't recommend dumping this stat.
Int is purely optional unless you like damage spells, as the best utility spells only cost time. If you pump that up to 100 you'll be casting very quickly, will one shot most things if you use the right spell, and will have plenty of spare many to spend on healing/damage/fireworks.
30 speed is decent. 100 speed feels right to me. IMO walking is the single most time consuming part of the game, especially if you're hunting for secrets, so this is one of the best stats to get high.
Resistance is pretty meh, as most debuffs don't last long, and you can always chug a potion. Rumor has it that at level 100 you get free passive mana regen. That won't stop the lunacy meter from rising, but mana is usually the rate limiting factor in casting anyway.
Warning: At high levels you get fewer stat points per level. It's 6 stat points per level until about 8, then 3 points per level until 50, and 2 points per level after that.
How long can you tank Death with stats like those?

Did this one to verify a death warp bug, but you can skip to 6:15 for the Death tankyness.
Also, I'd imagine the level can go for quite a good ways, but you just get diminishing returns the higher you go. Stopped at 200 myself.
I'm sure we all have our own thing, but my grind spot was the Catacombs and Mausoleum. Kill the Mares and the one Mi Go down there (it's a nice circular path over all so easy to do), and once that's done give the Mausoleum a quick rundown for the skeletons and the phantoms. Pretty much everything down this is weak to light, so most things will die in one or two shots from lightning.
I chose this spot because as far as I know it is the one area in the game that has a high concentration of mobs in a rather tight space. So it's easy to quickly run through and get a sizable chunk of XP.

Oh, be sure to keep your lunacy at max for the extra XP buff you get. Will also help with damage out put. Best way to do that quickly without expending those moonlight vials is to spam Quick Stride if you have it. It's the one spell that generates the highest lunacy build up. Just don't over spam it to avoid death.
(strength/dexterity for mages, strength/int for archers, dex/int for melee, everyone can dump defense, noone can dump speed, pretty much everyone wants 100 resistance for the mana regen.)
IIRC:
Levels 1-6, 6 points per stat. At level 6, 36 total stat points (including starting with 1 of each stat).
Levels 7-50?, 3 points per stat. At level 50, 168 total stat points (100 points in one stat)
Levels 60-100, 2 points per stat. At level 100, 268 total stat points (100 points in two stats)
Level 135, 100 points in 3 stats
Level 234, 333, 432, 100 points in 4, 5, and 6 stats respectively... or continue dumping points into your chosen combat stat well past 100... though you are probably one shotting everything short of a miniboss before then.
