Grass harvesting being slow can have a bunch of reasons: Once all the grass around the shack is harvested, it needs some time to regrow. There's the possibility to plant more grass in the building menu under "Plants & Fields".
During winter, grass grows a lot slower as far as I know. Sheep and other animals can also come by and eat the grass - so if you want to protect your "grass field", you have to fence it in^^
Another way to boost grass collection is to build a second Gatherer's Shack at another spot.
This produces grain, plus grass as a byproduct, and in fairly large quantities.
The grass produced by growing wheat fields, harvesting them, then feeding your citizens on bread should provide you with enough grass for the early game's needs, mainly for hut thatching and rag production.
To do this efficiently, you need a team of workers at the gatherer's hut with wheat fields within the collection radius, plus a worker assigned to hand mill the grain to flour, plus a worker assigned to bake the flower to bread, plus a worker assigned to haul the bread to the fireplace.
Later, you can set up extra farms which focus on grass harvesting, but this is best reserved for bigger colonies with more specialized needs.
Also, it's best to diagnose where your main consumers of grass are coming from. If you're not giving barn animals enough grazing space, for example, you'll burn through your grass reserves very quickly. Likewise, trading away all your clothing at the market can put stress on grass reserves, which form the primary resource in the clothing production chain.
