apparently, the game really doesn't like people resetting their progress, so it has numerous checks in place to defend against that(resetting flags in your save if a check indicates progress was made)
_ Treeshold's mod basically makes the game ignore (at least some) of those checks

Also, that's only to replay NULL Mode, which I haven't beaten thankfully
_ basically the game has a system of flags and checks- if you find a secret, it sets a flag. when you boot up the game, it checks for the flag. some secrets have numerous checks and flags (hence the mod's existence) so that if one flag tells a check 'true', it'll reset other flags to match this
thankfully in your case it'd be much easier: the simplest way would be going into the options menu, clicking the left arrow once to go to "DATA", and then selecting the option to delete your save data. I tested it just now and it re-locked the unlockables at the very least :p

Treeshold's mod[github.com] is simple enough to install- download the Assembly-CSharp.dll file and replace/overwrite the existing file of the same name found within /Baldi's Basics Classic Remastered/BALDI_Data/Managed/
_ the location of this is different between OSes; generally you can find it by going to the game's page in your library, then selecting Properties>Local Files>Browse to be taken to the game data
since I haven't tried the mod myself I don't know if you need to reset the save data as well, but keep that in mind in case installing the mod alone didn't do it for you
