Yes you have to water them. Forgetting to water your trees can make it so the trees produce no fruit, and the only fix for that is either giantizer or scything the tree. As for watering, if you build some monster barns and tame some monsters, you can get them to water for you. Just remember to drop a healing spell on them every few days. Also, you should get a magnifying glass to check your soil stats. If the hp of your trees is getting low, till some corn or clover on that square.
Side note: you should upgrade your tools with the magnifying glass. That will allow you to see soil stats without needing to switch between tools. I love having it on my scythe for when I'm trying to level up crops. Putting it on your hoe might also be a good idea.

Personally I put a magnifying glass on my head piece, that way you get to see the stats when you take out any gardening tool.

Thanks for the tips :)

However, since in RF5 the trees uses a 4x4 soil, I don't think the corn or the 4-leaf clover would help. Not sure, since mines are ok until now, but I gess that will need some nutrients instead.

You can harvest clover, corn, or use withered grass. Pick it up and set it down in the space, then till it. You don't have to till it before harvest. Nutrients actually lower soil HP so they will make it worse, not better.

Also be careful. Unlike in RF4, if you set down a stack of corn or clover to till, it'll use the entire stack instead of just one.

Unlike RF4 all crops now ignore seasons except for meteor crops which relies on what season it was planted on because meteor crops changes depending on the season (strawberry, corn, yam and turnip) respectively
It's strawberry, corn, pumpkin, and potato
