Conifer trees disappearing into the woodpile

This is probably self-evident but wanted to make sure. When I cut a tree into logs and then move the logs into the woodstorage, they (usually) instantly disappear. Does this mean a worker took them?

Second question, is there a way to reserve some crops for making seed bags? Every season they burn through the leeks, turnips, lotus, etc, and I can't plant any more because I can't make the seed bags. thanks

If they vanish and you have any job active from villagers they reserve that tree for it.

Exclude any crop from the villages needs if you want to process them into seed bags.
