I have all the ingredient for making Saki but the workers are not producing anything.
I have Rice, Water, ice, Firewood, Koji mould and a Paddle. Am i missing something.

You have workers assigned at the workplaces? The sake isn't used to fulfill the needs of the villagers?

An unfortunate limitation caused by the way production is calculated at the end of the day can cause some initial problems when dealing with items and intermediary resources.

Day 1

So initially (day 1) your workers creates cooked rice; (all production occurring at the instant of the end of day in the rice cooking barrel) assuming the worker is assigned has the stirring tool and all required materials (rice, water, fire wood)

On day 1 (assuming you haven't already created boiled rice yourself) your worker at the fermentation barrel never has access to cooked rice. As such does not create any fermented mixture for use in the filtration press.

Day 2

If your villagers don't eat all the cooked rice (can be disabled in dynasty menu > priorities > meals uncheck to prevent villagers from eating); your worker at the fermentation barrel now has access to the rice cooked the previous day and can create fermented mixture (again all production occurring at the instant of the day ending assuming worker assigned and another stirring tool available and all other materials (koji mold, more water, ice).

Until day 2 ends you still have no fermentation mixture to use in the filtration press.

Day 3

Your worker at the filtration press finally has access to the fermentation mixture created on day 2 and will begin to create sake. As with all other steps you will not see any sake actually crafted until the end of the day.

Recommendations

Ensure your villager food needs aren't consuming your cooked rice.
Cook some rice yourself prior to assigning a villager to all stations just to have some excess in your food storage.

Once you have excess rice and someone cooking more on a daily basis you can assign someone to the fermentation barrel. Have a worker create fermentation mixture for one day before assigning a worker to the filtration press. (Due to the time delay in crafting fermentation mixture you cannot craft as much as a villager will consume in a single work day from a single fermentation barrel but a villager does not have the same time delay crafting).

Once you have a pre-supply of all intermediate ingredients you can have all worksites assigned.

Keep in mind that while finished sake fulfills a high villager beverage need until you actually have a full cycle going you will be consuming a lot of water. Consider having an additional villager assigned to an advanced well.

Thank you for taking the time to answer my question.
Yes I have workers at each station in the brewery and all the ingredients and tools needed plus cooked rice in the food store which I’ll keep checking from now on.
So really it’s just a case of waiting then.
Before this big update i’m sure I could make loads of sake without the wait.
Anyway I’ll see what happens 🤔
