Why are my villagers so pissed off
I have built my first village and have enough food and water and have both assigned them jobs and houses and yet for some reason they are all angry. Why is this?

Sounds like you're struggling with that aspect of the game mechanic. Have you got it sorted? I'll throw this list down just to consolidate the things I've done, as it does take a season or two to get them happy. But then you'll have it squared away.

- Make sure everyone has a home (and maybe add a Small Lamp, Bamboo Shelf, or other small items).

- Give them a job, assign tasks, and make sure tools are available and assigned, then you tell them the numbers to create/collect for each thing.

- Make sure you have literally dozens of "buckets" (the sub-containers that buckets are broken down into once you fill them at the Well) of water in Water Storage.

- A good variety of Food in Dynasty Food Storage with Cooked Meat, Wineberries, Cooked Gobo roots, and cooked Eggs should do initially. Later add other stuff (Lingonberries, Fish (as you find/buy some), Mushrooms, etc.)

- Make sure there's plenty of Firewood in Dynasty Wood Storage.

- You've set their rations to the "Green" smiley face...

- Maybe create a campfire and some benches around it. They will use it. Other decorations in the village are supposed to help as well.

- I've found/bought a couple of Masks and put them in Dynasty General Storage. This is supposed to make people happy.

- I don't know if it's a factor yet, but collect Sake and put it in with Water Storage.

You have to click on Green Mood at the bottom of the Dynasty tab page for each concept : food, drink ...

Nope, wrong.
Do you have a food storage, and a beverage storage, the buildings, not just the containers somewhere... with food, and beverages in them, enough to feed and water your people?
the green is extra, to make them happier, the orange smile keeps status quo.
If you lack the actual food and beverage storage houses, you aren't feeding your people, even if you have food and beverage storage containers somewhere.

I have placed the actual buildings down yet their needs are -250 and -150

You have to change season for any changes to take effect. Like putting it green faces, if you have enough food and water, change season for the effects to take hold.

They'll use 250 and 150, but do you HAVE 250 and 150 for them to use, in storage? More? Less?

I have done about three rounds of seasons they have been angry for all of them

I have 407 under meals and 88 under drinks? Shoulden't that be enough at least for food

It's enough for food, but you lack beverages, so they're mad.

I don't see why they are so angry. I have almost starved to death countless times finding food for them and building their shelters and then have nearly died while going out hunting for them yet when I assigned them to jobs they are so unhappy that it takes ages to do them.

Mechanics of the game, you're not fulfilling their needs, so they don't like it.
Get more buckets, a well, and do a bunch of water, and toss it in water storage, until you have more than enough to get them what they need. They'll stop being mad then.
