Ive looked everywhere from beside creeks to fields and mountains..where are they?

When you leave Sosogi (the burnt village) and walk towards the cherry trees, you will see a small cliff side on the left. On top of those cliffs you can find nests. There are more in the world, but those are among the easiest.

Just something I didn't immediately notice, you can sort of fully harvest the nests you find and if I recall right, the last harvest will get you feathers. I don't think there's any downside to fully extracting them, unless theres some system for birds I didnt notice (tbh before I got to the first village I explored a lot of the forest around it running around blindly and stumbling into the nests so, I might be wrong).
