I took a look at Rodmap and didn't find anything related to any means of transportation, such as a wheelbarrow, horses, or any other means to help collect materials away from their base. Is it possible to implement this in the game?

You may fast travel between any 2 village bell towers, yours or NPC villages, though you must discover NPC villages before being able to fast travel. This procedure costs 10 coins per trip. Your inventory is all you have but considering that you can carry 36 items (including otherwise incredibly heavy logs), there's really not a need for such things. The largest issue you might face is the aforementioned logs because they do not stack (and likely never will). But this is the challenge of the game. Working your inventory to maximum effect while using the limited means of travel.

it still takes a long time to get from 1 side of the map to the other. Yes you can fast travel but before that you are stuck on your feet and horses would help with that.

and during the Sengoku period Bashaku were around and they used their horses to transport cargo so it is not like it is uncommon for people to be riding horses since a lot of them were farmers

I'm not saying this is permanent. It's just what we have to work with right now. There aren't any domestic animals in the game. I'd imagine it will take a lot of work for the team to put them in. For now, this is the state of the game. However, a post such as this would go a lot further if it was in the suggestions either here or on Discord.
