I don't know how different the coop might be, as I'm used to its single player mode in Medieval Dynasty, and I'm not interested in tests of multiplayer. I didn't get into playtests of Sengoku Dynasty, but anyway all the gameplay videos I watched were single player. The only difference I see is that Sengoku Dynasty is getting multiplayer from the beginning than being added a couple of years later.
From other differences Medieval Dynasty is using UE4, Sengoku Dynasty is using UE5. Medieval Dynasty starts in 1st person mode, but you can switch to 3rd person later, and Sengoku Dynasty seems to be starting in 3rd person mode, but you can switch to 1st person.
