Report a translation problem
If I unplug the HDMI monitor, the DP monitor returns to it's normal resolution. As soon as I plug the HDMI monitor back in, the DP monitor is capped back at 640x480.
I ended requesting a refund, and buying a USB C hub with 2 HDMI outputs, that works perfectly on both, Windows and Steam OS.

It works with this one, but I guess that any hub with 2 HDMI outputs will work the same.
Not the ideal solution because cable management is much worse in this kind of hubs, but at least I can have 2 external monitors in Windows this way.
