Might also be that his video does show her death but he is coping so hard that he refuses to believe that reality and we see it from his POV
He said something he didn't mean, and pissed her off right before she left for the journey - and he clearly had immediate regret that festered a bit. We don't know how long passed between then and the one Isaac is watching at the start (which I would imagine was the actual next time he saw her/heard from her in any meaningful way) - and so he probably sat down like "Thank god - she sent me something", then gets to that part and just snapped.
Sorta like when you watch a video now and are like "Is that AI?" Then once you start questioning your own sanity, you're prime real-estate for Unitologists and the hivemind.
