Don't you get a fish eye affect at 122H (horizontal)?
The default 59V (vertical) works out to 90H (horizontal) on a 16:9 ratio monitor.
i.e. 1920x1080
Hence being the default.
Unless you're running an odd ratio monitor or have multiple monitors, going past 90-100H would look kinda odd I'd reckon.
Not sure, you can check.

However, what do you think about optimal FOV in games. Our eye is not 90. It's hard to emulate the eyes.
A lot of games started using 70 for some reason, which annoys me.
I always find a way to get back to 90 in those cases.
You also have to consider the distance from monitor.
And on and on....
Be nice when we can all have decent VR headsets that don't make us throw up :)
