each persona game has a different story so it doesnt matter where you start in that regards
when it comes to the actual content i find that P5s dungeons are much better then P3s tartarus
But if you chose exclusively P3 or P5. Then it is better to play P3, because P5 is not really difficult, but there are a lot of different mechanics and information, sometimes it is not easy to get the hang of it right away.
but persona 4 like above is the one you should get into first as it is a more completed game in term of fighting mechanics and life sim than p3. after that you can try p3 later as it shares a lot of similarities in term of enemies and mechanics
p5 is a different game so the mechanic is more overwhelming to get in at first.
