Joker doesn't have a canon name. Here's why.
Joker doesn't have a canon name because he's meant to symbolize the player, as you are the one choosing what his daily activities are, and what he says. The only reason why he's named Akira/Ren is so that other characters can talk to him.

Yes, and that is literally what makes that his canon name. That's how canon names work. Just because you can rename Link in most of the older games, doesn't mean he doesn't have a canon name.

every MC has a canon name and Ren Amamiya is his canon name, also doesn't matter if you name him something else. The protagonist for Persona 5 is Ren Amamiya. Same for the protagonist in Persona 3 and 4, they have a canon name.

Or like how Link is the canon name of the character you play as in Legend of Zelda.
