Can I remote play together with my sister somehow?

You mean stream the game, right? Remote play together is for multiplayer.

I guess you could screen share to her AND allow her remote access of the PC, but that would be a really rubbish way of doing things.

It would be best to just give her your Steam account info and she can download it to her own PC.

As mentioned, Remote Play Together is for playing local multiplayer games online, that's it. For sharing your screen so she can watch you play, I would recommend Discord. If you want her to be able to play remotely as well, Parsec is able to do that.

Does she have a Steam account? Family sharing option should be possible so she can play... in theory.

You could screenshare to DIscord in a call with her if that's what you're looking for

Family share (you can't be playing any other games that she doesn't own, though) + some kind of screen share with voice chat. I believe steam has this feature, otherwise discord.
