Maybe Chiron. A mentor, taking young people under his protection and helping them grow. Doesn't fit too well with the thieves/rebellion angle of this game though, there is probably someone with similar themes that would fit better, but I'm not too familiar with the subject.

Philactetes would be a good choice as well. Chiron would work better though.

Sojiro is more of a guardian though. Hector from The Illiad would work as well. Guarding his city and family despite the foolish decisions of everyone in it.
