[TL;DR below, but please read, this has a lot of helpful info]
When I play against other people who are random, it often doesn't feel much different from fighting normal opponents. (aside from the added stress of frantically looking around at the start of every game to see what I need to look out for, which isn't that big a deal.)
If I'm playing against a player who is sticking to a specific combo, it's usually fine for a while, like you describe, but it does get annoying after a long time. When this happens, I'll try to change my loadout to counter theirs. That's the intended downside of using a single combo, swapping to counter is an intended part of the game. In your case, I'd try using Bow or Beam to detonate their mines from afar, before they can teleport onto you. You could use a melee ability like Drill or Meteor to punish them for getting near you, or use Dash or your own Teleport to stay away from them.
Most loadouts only need you to pick one or maybe two abilities to counter them, in this case I'd probably just go with bow, since it can detonate mines and act as a melee ability, leaving my two other slots for whatever I want. If your strategy works consistently, you just have to execute it for a few rounds, until they learn that their strat is no longer working, and they'll swap! After that happens, you can go back to what you were doing before.
TL;DR, When you're getting annoyed by a certain combo, you should switch your loadout to try and counter it.
Counter-swapping is an intentional part of the game, it's why you can't switch if you won the round. Trying to think of how to counter someone can be very fun, and if you can't manage to do it, just leave and re-queue with someone else. Or kick them by clicking their profile icon, if you're the host. (the outline is the same as their slime color)
That being said, you can always play the game however you'd like, and I'm certainly not trying to blame you for going all random. Doing that just means that you'll never force anyone to counter-swap you!
Also, if you need a tip to fast-track countering a loadout, maybe try being more aggressive, and pick straightforward offensive weapons to just run up and kill your opponents. A lot of combos need room to breathe and set up before they can do anything, and they're often helpless against someone rushing them down. If a loadout doesn't have offensive abilities of their own, you need to not be afraid of them, and try to approach.
