The ideal way I would like to play this would be...

VR headset, With a force feedback steering wheel and one hand that operates the levers with the VR motion controller. Is that possible?

If the one VR motion controller with a real ffb steering wheel won't work, then I will settle for a FFB wheel and flight stick.

Ontopic: Not only is it possible but we are working on it right now. Our master plan is to have support not only for the wheel but also gearbox and pedals + VR on your head.
We have the basics in the game already but it is disabled because we couldn't give it proper testing and didn't want to ship the game promising untested stuff.
TL;DR: YES, it's coming. It is on our roadmap :D

so far i only can control the tilt angle of the fork with my joystick. Works fine but i want more :-)

Wheel+Pedals for steering/moving, and Joystick for lift/tilt/sideshift would be perfect i guess.
