The furniture factory in Bryson could use the lumber from the sawmill without going via the interchange for an example, so the potential already exists, limited but it is there in the game.
If you want to spend money just to have box cars sitting around just for aesthetic reasons, by all means...
And yes, hauling dimensional lumber from the sawmill and coal from the mines to the furniture factory would be pretty good as well.
There are plenty of opportunities for more captive service industries that could be added in addition to the interchange service, rather than replacing some amount of said interchange service.
