how do i turn train around?
i never seen a turn table so how am i supposed to flip it to go the other way?

In the house at the turntable there is a control you can use.

You can use the wye at the junction to Connelly. If you have already repaired the bridge to Bryson, there is also a wye there past the Bryson Depot, and also a turntable at the Bryson repair shop.

In any case, for trips between Whittier and Ela in early game, reversing direction is not practicable. Just drive tender-first back to Whittier

In bryson there is a wye right behind passenger terminal which fits my ten-wheeler and 3 passenger cars (2 cars and observation car). When you make the passenger train longer it no longer fits and you have to go through eaven more complicated shunting to rearrange it.

Or you do it like in real life and only turn your locomotive around(unless you have observation car, then you need to turn whole train around).
There is a wye at whitter going up to connelly. Its not listed but the track is laid out in a wye configuration.

I usually run my train tender first from Sylva to Bryson City. Normally like this:

[Front] Passenger Car -> Locomotive -> Tender -> Freight Cars -> Caboose (if available) [Rear] in reverse. It makes the flare spotting difficult though.

I don't like to run long distances down the main line in reverse unless I have a Caboose attached, but sometimes you don't have much of a choice.

there is a turntable in Bryson. Whittier, Bryson and alarka have Wyes. Dont be afraid to run backwards, its not a mortal sin and we do it IRL everyday (ran backwards last night as a matter of fact) hope that helps

Yea, running tender first was actually a pretty common practice in a lot of these areas.

Build the Engine Service Facility at Dillsboro and you inherit a turntable there. Expensive, but worth it.

What about "pushing" the train for long distances (several miles)? Some of the turnouts the way they are you can't help it.

Example:

I know crews that had to shove up entire branch lines, 10-15 miles in some cases. They just ride the back or, if they are lucky, on a caboose if they had them.

"shoving" or "shove movement". But most railroads (including shortlines) require a qualified employee to be on in front or riding the movement. And know from experience riding a car more than a few miles sucks.
