Exo suits are equipped on mission setup. There were previously individually assigned but from players feedback it was not good so we changed it that way.
Field equipment (armor / boots etc) must be equipped in the equipment tab of each gaters detail panel. Note that you can only equip one of those for each gaters.

So every gater can only wear one item? Maybe make different slots like 1 armor, 1 boot etc. So gaters could combine some items? :)
Note, btw, that weapons are sort of inverted. You assign people to a weapon dispenser, not the other way around. At least for the plasma weapons. The others seem to be grab at will. Weapons are only used in base defense, afaik.
For others looking for the same answer, you have to specifically select each gater individually and manually equip said item in a particular tab as stated above.

I wonder if a small infographic tutorial in-game would help clear confusion on this for anyone else in the future. Loving the game so far
When the Gaters came back from a mission, there where simply wearing them in the base and constantly complaining about being hungry and sleepy - seemingly unable to eat or sleep with the exoskeletons on.
Saving and loading simply deleted the exoskeletons.
I haven't had that problem, although they do unequip the suits when they need medical attention so when you go to do the next mission you have to go into the mission screen and re-equip them.
I don't think I've seen them walking around at home with them on.
As for guns, I've not seen any UI for equipping guns on away missions, but maybe I missed it.
