Knight with hammer -> Centaur
Knight with one rapier -> Phoenix
Unarmed knight -> Minotaur
Knight with spear -> Pegasus
Knight with greatsword -> Dragon
Knight with 2 swords -> Griffin
Knight with shield -> Stone golem
Knight with 1h sword by the belt -> Cerberus

Ok, here goes:
First I figured out which creature is each emblem, pretty simple:
Guardian of gold -> dragon because they hoard gold like Smaug
King of earth and sky -> Griffin because pegasus fits in other place and is part lion so king.
Winged friend -> Pegasus obviously
Guardian of Labirynth -> Minotuar
Guardian of Earth -> Stone golem because stone feels like earth
Guardian of Dead -> Cerberus guards Hades
Bull Hunter -> Centaur, kinda guess here but others didnt fit here and he is shown with a bow so hunter it is
Immortal -> Phoenix because it is known for ability to come back to life

Now the knights for them, here order is important because many come based on what was already placed:
1) Pegasus / Spear -> Dangerous from distance, out of all knightly weapons spear fits the best here.
2) Phoenix / Rapier -> Precise strikes. Rapier seems the only weapon other than spear that is very dependent on precise hits. If we nitpick swords kinda do too but rapier is more commonly seen in games as a precise weapon
3) Centaur / Hammer -> Next to Phoenix/Rapier because next to born of flame. Pheonix is born of flame.
4) Dragon / Greatsword -> Underneath the armor with greatsword is a dragon marker, this one was a wild guess but it worked.
5) Griffin / 2 swords -> Near treasury so next to a dragon
6) Minotuaur / Unarmed -> Directly looking at griffin the winged beast (dragon fits other statue and i think the dragon mentioned here is chinese dragon so no wings)
7) Cerberus / 1h sword/belt -> Looks at the knight with dragon mark beneath it from far away
8) Stone golem / Shield -> Near underworld so near cerberus

Might be that the intended order of thinking was that 4 should be the last one and rather than putting dragon there I should base my other guesses on the marker beneath the knight and put the dragon last by elimination

Yes, puzzles in this game can be frustrating

Alright thank you so much. I think the problem with these puzzles is they're based off objective information that the creator knows but you don't so you can't obtain the solution without googling something in relation to it. Like the bird call puzzle solution was finding information out about the birds, which is mentioned nowhere in game.

With the bird puzzle its a bit easier because it's only 4*3*2*1 combinations and greatly reduced if you are certain of at least one bird position. Knights, meh, ir's not viable to brute force it
