we get tons of gundams, but barely any zaku love.
There are at least 6 variations of the Zaku I and over 26 variations of the Zaku II that I know of.
Some Zaku were custom built prototype that ended up being only used by an elite character while some other were object toward a balance between mass production and precise combat capacities.

Also, a funny fact about the Zaku I which has become canon in 2003 is the fact that most of its movements and actions are based on mo-cap recording of a teenager girl's body called Mion Hosioka.
As such, the Zaku I walks, sits, runs, picks and holds things in a rough feminine yet tom-boyish way.
Long story short, Hosioka inc. was the factory that "won" a contest during which each factory had to modify the MS-03 Zaku into a mass-production-ready unit that would be powered by a new type of power generator (nuclear power). Zeonic did this because of the risk involved in "playing" with nuclear so instead of pushing the project in their own factories, they would push the role and risk on smaller factories that could be pushed aside in case of a meltdown.
Zeonic factories would take around 2 years to build a single MS-03. By the release of the MS-05, designed by Hosioka, a single factory was able to push out as many as 50 (fifty) MS-05 Zaku per month with all its design alteration aiming toward cheaper and faster industrial production. The OS was primarily designed by a bunch of old men veteran programmers and engineer at Hosioka inc. They used mo-cap recording of Mion Hosioka (the daughter of the factory boss who's a robotic geek) wearing a mo-cap suit for a whole day, doing many thing such as picking thing up, sitting and taking a crap on a toilet, making tea, doing a massage, etc.
By the time Zeonic produced the MS-05, their top software engineers couldn't really understand how Hosioka's software engineer made the MS-04 Zaku's move as efficiently as it did with not risk of system crashes or overheating so they used it as-is and only patched onto it. The Hosioka's OS control system was so advanced and precise that it's able to pick a glass box with a 1 square meter box made out of solid glass with a glass of water in it and move it around and on top of a stack of other boxes without spilling any water. By the time the Zaku II was released, Zeonic did finally take over the Hosioka's OS, but kept a large portion of its systems intact.
While not exactly official in a way that it's said straight, you know how Char Aznable, with its red Zaku II Type C (and later Type S) decided to "turn off" its space flight assist system so he could get a better control during combat? That feature is shown as being implemented and coded by Mion Hosioka as a stop-gap during the factory contest (space race & obstacle evasion) set in space because the system would only feed and push against what she felt was right while controlling the MS-04 Zaku I in space.
Funnily enough there actually seem to be 6 Zaku II models, which is almost as many as the total number of all available GM models at 8, as a GM fan that kind of hurts a bit.
But such is the life of being a fan of grunt units I suppose, I'd imagine there's people who don't even have their favorites in the game at all.
