As for what the game has for people who aren't dedicated Gundam fans: the Gundam Breaker games have always taken place in a separate world from any of the "proper" Gundam storylines. They feature original stories and characters that are themselves fans of the various Gundam series, but the player doesn't need to be familiar with those series to enjoy the individual experience. Additionally, the fun, frenetic gameplay and the collection-driven, in-depth customization systems are well worth the price of admission.
If you want a primer on the suits in this game, there's a nice Steam guide on the previous game with its entire roster including pictures, which are all returning in this game (note: this is from New Gundam Breaker, which has the worst gameplay in the Breaker series, so don't judge the other games too harshly by association):

It lists 250, but a good portion of them aren't wholly unique (there's color swaps, and minor model variants like a different head or onboard weapons).
As for examples of custom builds, apparently the Gundam Breaker 3 reddit is a good place to start, but I wouldn't know myself.
I guess if you enjoy a gameplay loop of grinding and looking out for parts and stats for your kit, that might work for you.
PS5 has better graphic,but most Japanese people are on NS, so the player base is a bit better.
