It doesn't add to the theory, but the one other thing I would say could be related to this (and that some people seem to either not know or forget at times) is that Undertale is an offshoot that grew out of the original idea for Deltarune. The idea for Deltarune existed first.
Meaning the Knight is likely also someone from Kris’s past that was part of this game, namely Dess.

(You) get to ask Deltarune characters multiple questions which would only make sense for someone who experienced Undertale.
I'm more inclined to connect Asriel's epic game stuff with darkworld town, which has classic RPG-style shops. So Ralsei is mimicking Asriel and darkworld town mirrors Asriel's game stuff.
