Also, as far as i can tell, HI3rd can be played with keyboard and mouse without much hassle, unlike some AAA titles ported from Playstation that forced a certain playstyle that make keyboard/mouse unpleasant to use and players are forced to use gamepads to be able to fully enjoy the game. The PC version of this game does its job to suit the PC players imo.
The work around for 1 handed players is simply replace the left and right control with the camera left and right control and that should simulate a 1 handed situation, though not 100%, it works for most players.
Steam version further included the Steam Big Screen Controller settings that you can "enhanced" the gamepad experience further more with settings not provided by the game. But whether or not that is considered cheating is.. well.. debatable..
I believe there wasn't option to remapping controls at the Steam launch if I remember correctly. I'll give another chance 'cause you wrote everything with such a details.

700 hours in, and I still use the default Keyboard and Mouse controls, well, Mouse to move around menus, but mainly keyboard for all of combat. WASD movement, QE for left right camera movement with NM for up and down, JKUI for attacks and dodges, enabling auto target being the most important aspect
for the average new player, that is definitely horrendous, I got used to it over time but that doesn't mean others have to, I usually tell people to try controller first, if not, see if they can manage keyboard controls with extensive trial and error, otherwise it's best they stick to mobile
For those who don't have a controller, you can even use your phone as a controller via steam-link app, the settings might be tricky for beginners but once you get to know what goes where, you can create your own "dream controller" on the phone or just out right play it on the phone using steam-link with all the advanced controller features the original phone version of the game didn't have.
Reviving a year old tread just to tell the world you didn't know you can move the cam with the mouse by default in the game? That "catch" is, you need to hold down your mouse button to move the cam.
And there's more attack buttons than a normal mouse can handle in this game, and depending on the stage, some buttons even exceed what a gaming mouse can handle. Unless you play with a gamepad, else the only other way to handle that many buttons is on your keyboard. P/S: No one plays a Brawler (Anime Fighter) game using a mouse unless they intentionally wanted to be handicapped.
