how do you tame a horse

Once you get a stable in the story, go to Wild Horse Lake, use the 'Catch Horse' option (uses 5 AP). Select which of the three areas to go (better horses require more mind). Click on one of the big bushes to start trying to tame horse. Click the green options. If you have Stallion's Diced Carrot you can use this to heal (not sure if it's actually worth doing this on the top end horses through, probably better to just use another option to reduce their will)

Once you get a horse you can upgrade them by buying Care Tools at the Blacksmith shop and using them at your stable to upgrade your horse. Care Tools can increase horse speed, number of accelerations and beauty.
