what counts as a demon?

I'm trying to get a couple endings that require you to "kill 80 demons" but does demon refer to just every monster you encounter in the forest, or just the big bosses? cause I've tried a couple times to get the endings and keep going through the forest but never get them...

Definitely not only final bosses, though as enemies can be regular or elite - I am not 100% certain as I could not find a definite answer elsewhere - could be that only elite enemies, found in rounds at later levels of adventuring, that have skulls with 4x single spikes, rather than no spikes, count.

To ensure no issues I would do an adventure at every single turn as soon as it becomes available.

According to the game and the Handel Family knight path requirements, every enemy in the forest counts as a demon. I just tested it, killed 19 enemies in the first forest and got +19 towards the "kill 300 demons" goal. But who knows, with how weird this game is sometimes, they might have different definitions.
