My suggestion to get all romance endings in a single run is to befriend and reach best friend status with red heart with the main characters and do the two first events, then save on Winter January, which is when the third event for everyone will start to pop. When winter year begins, you'll just have to accept the third event of whichever npc you want an ending with and reject all the others, this way, no matter who is on top, you will only end up with whoever you accepted the third event with (because the third event is decisive for romance ending). To get the others romance ending, you simply have to reload and accept someone else's third event.
However, you should note that this only works with the main characters. If you do as described above, but have a side character on top (Mary, Rebecca, Jermain, Basilou and Connie), you'll end up with the side character because their events are automatically triggered and you can't refuse. But you can still get their endings without them being on top (if that's what you want) with the method above, as long as you refuse the main characters' third event.
Romance endings trigger at 140 favor or higher, not just by filling their hearts, and the character with highest favor (ignoring Claire) determines which romance ending you receive.
If you're achievement hunting, it's best to get everyone to around 130 and then just gift specific romantic interests above the ending threshold on the last turn, since polyamorous romances take priority when they're available and that can lock you out of the monogamous endings on that run.
Also remember to shake your fist at Jeffery every time he messes up your endings!
