The status effect really depend on the spell or attack. You need to read every spell and attack to know which do what.
White witches and snow elementals have a freeze spell in addition to their basic attack.
As an other example, in the pyromancy tome. The arrow fire enchantment inflicts burning, but the melee fire enchantment does 20% more damage to burning creatures. Even the same type of spell doesn't necessarily do the same thing.
