Picking a Damage Type for a Dragon Lord
So I want to make a dragon, but I'm nervous about the the fact that dragons get only a single damage type (claw attacks included). So for instance if I take a nature Dragon to go with a nature focused tome build, and I run up against something super high blight resistance, is my Dragon suddenly going to be completely useless?

Sort of? You start off with 50% damage of physical and elemental type damage for your claws. Your breath will start as a single element. At level 12 you can add another element to your breath or enhance the existing one. Finally you can mix up your damage through skills like other rulers.

Tail sweep / bash is also always purely physical damage.

Claws and tail swipe will stay physical, though the claws will have some of you types elemental damage as well. The tail though, just a massive physical hit.
And no, even if you are focusing solely on one elemental damage type, your dragon will not be completely useless, merely less effective if your enemies are highly resistant to that damage type. In a pinch you can always get some mage skills and get an evocation skill with a different damage type your enemies are not as resistant against, or you can make a wand to give your dragon provided you find a magic material for the damage type you want.

Like any other damage channel, even a high resistance won't make something completely useless. Besides, you can only do your breath attack once every other turn once you have the passives for it, so you typically need some other thing you can do anyways.

Damage types are less important in AOW4 because resistances are weaker than in AOW3.

The Dragon Lord type changes a lot more than the damage type of the breath weapon.

Don't fret about it too much, as with many lukewarm things in this game this is mostly an irrelevant detail. Mostly.
