Food is used to grow your city.
Production is used for building structures. If no structure is being built, production is converted into gold at a 0.25 efficiency rate.
Draft is used to recruit units. If no unit is being recruited, draft is converted into food at a 0.25 efficiency rate.
Not sure what happens with Food, if anything, if you ever reach a maximum city size. In Planetfall you could share food with other cities, but that isn't the case here.
More seriously, I know what you mean. I picked up some food on the map, and it added to my "food." What food is that? My "total" food? The nearest city food? Guess it's time to hover like mad. Let me know if you find it!
Not only that, the tooltip also mentions how much the pickup will change the current growth time.

However before ending a turn, you should have a stock of whatever overflow you have from the last produced building, and any production pickups you get during the turn.

Example if the building requires 250 production, your city has 22 production output, it would take 12 turns to complete.
And you would have a bit of remaining surplus production, making the next building shorter or increasing the "merchandise" function (when you have no building queued)
If you have not selected a building / unit to produce / train when you hit END TURN the stockpiled resources are turned into gold / food.
